Gary Haugen serves as president and CEO of IJM, where he leads IJM's global casework and groundbreaking structural transformation of public justice systems worldwide (Gary was recently named a 2012 Trafficking in Persons Report Hero by the State Department). He and his wife Jan love to cook, and this tomato sauce is the Haugen family-favorite!

Justice Jambalaya*

Ingredients:

  • 4 tablespoons olive oil
  • 2 crushed garlic cloves
  • 1 teaspoon crushed red pepper
  • 1 tablespoon finely chopped fresh basil
  • 2 teaspoons sugar
  • 4 - 5 vine-ripened tomatoes, cut into small pieces (peeled, if desired)
  • 3/4 c half & half
  • 4 boneless skinless chicken breasts
  • 1 crown broccoli
  • Salt and pepper to taste
  • Fresh grated Parmesan cheese

Steps:

  1. Cut chicken and broccoli into bite-sized pieces
  2. Heat 2 T of olive oil in a skillet. Add 1 crushed garlic clove and cook until golden brown (note: be sure you don't let the garlic burn!).
  3. Add chicken breast and cook thoroughly.
  4. Add broccoli and cook until al dente.
  5. Set aside in a separate bowl.
  6. In the same skillet, heat 2 T of olive oil and 1 crushed garlic clove.
  7. Add tomatoes and simmer until soft, gently smashing with fork or spatula.
  8. Add sugar, basil and crushed red pepper.
  9. Add half & half (note: do not let the sauce boil at this point).
  10. Add salt to taste and a pinch of pepper.
  11. Stir in cooked broccoli and chicken
  12. Serve over pasta and sprinkle with fresh Parmesan cheese
